In that case I think your media container has the aspect ration set wrong. The Plex transcoder will actually ignore this and will see what the ratio is when it starts transcoding the file. It looks like the roku is seeing the same incorrect flag and trusting it. Have a shot re-encoding it but keep a close eye in a setting for the aspect ratio.
